Apprentice Chef Final
Grace Hynes and Niall Stokes competed in the final of the Apprentice chef culinary competition today on Thursday the 9th of May in IT Tralee. They both created and produced a high quality dish promoting the use of Kinsale’s final ingredients and incorporated the theme of ‘Good mood food’ into their dishes! Grace made a fishy trio consisting on baked salmon with a crab and lemon crust served with colcannon, creamy mussel sauce, roasted asparagus and mint pea purée. Niall was one of few contestants to make a vegetarian dish and produced a beautiful cabbage roulade stuffed with mushrooms, lentils and brown rice. This was served with a sweet potatoe rösti, orange and beetroot purée, roasted cauliflower, bean and lentil salad and a lemon foam. Both students did exceptionally well and enjoyed the experience tremendously!
